Ingredients:
- chicken breasts
- olive oil
- onion
- green pepper
- red pepper
- polano pepper
- rice
- curry
- salt
- spinach
- avocado
- lime juice
1. Broil chicken
2. Saute veggies in olive oil and add curry, salt, and lime juice
3. Prepare rice
4. Either mix it all together for easy left-overs or layer it.
5. I had a bed of spinach, added rice/veggie/chicken mixture, and then sliced an avocado over the top
Oh my goodness. Yum.
